Best Cold Vegetable Appetizer Recipes

Prepare all the ingredients needed:

  • 6 small cucumbers
  • 1 small carrot (optional)
  • 1 teaspoon of salt, or more as desired
  • 2 tablespoons of rice wine vinegar
  • 2 teaspoons of chili sauce, add more if needed or desired
  • 1 teaspoon of white sugar
  • 1 teaspoon of sesame oil

Method:

  1. Wash the cucumber. Make sure that it is clean.
  2. Slice the cucumber into halves (lengthwise), and then slice into quarters (or whatever cut you would like to do). Be extra creative if you want!
  3. In a large bowl, place the cucumbers and mix the salt. Toss it and let it sit for about twenty to thirty minutes.
  4. Cooking tip: If you want to make your cucumbers crispy, you should drain the excess water. Tossing the cucumbers with salt and letting them stand for half an hour is the key.
  5. Mix the chili sauce, salt, sugar, rice wine vinegar, and sesame oil in a small bowl.
  6. Coat the cucumbers with the spicy but sour mixture. Mix the carrot slices (as you wish). Have a taste and feel free to add more chili sauce or salt, as you desire.
  7. You can serve this immediately or you can also put the dish in the refrigerator and serve it when needed. Putting it in the fridge will also enhance the flavor because the cucumbers will absorb more flavor.

Serve it cold or at room temperature.
