Tonight's Dinner: Hongshao Yu [Braised Tilapia] served on Fried Cauliflower Rice Ambrosia Salad As many of you know, I belong to a food co-op, and their weekly box of fresh produce & eggs, and sometimes various meats, cheese, and fish which supplies about half of my foodstuffs. It's sort of like Hello Fresh or other "preselected dinner kits" except mine aren't necessarily portioned and ready to cook with sides, seasonings and cute pictorial instruction cards to guide you ... whereas my co-op box is as locally-sourced as possible, is full of surprises, and occasionally unusual items even for an omnivore like me. The whole tilapia in yesterday's box was a new item for me. Now I have cooked a lot of fish over the years, mostly Trout and Salmon, and fillets of Snapper, Tuna, Swordfish, Cod and Halibut ... so I went in search of a recipe. I decided to go with the Chinese braised whole fish. There was a bag of riced Cauliflower, and the Strawberries, Bananas and Oranges were also in this week's box. The Hongshao Yu was quite tasty, but messy from trying to fish out the bones ... I'll try this recipe again but will use boneless skin on fillets. #TonightsDinner #HongshaoYu #BraisedTilapia #FriedRice #CauliflowerRice #Ambrosia
